Fried Tilapia with Green Chili Sambal

Ingredients

  • 2 medium tilapia fish
  • 1 lime
  • 5 tablespoons all-purpose flour
  • 1 teaspoon salt
  • Ground pepper (to taste)
  • Oil for frying (generous amount)

Sambal

  • 10 green curly chilies
  • 10 green bird's eye chilies
  • 6 shallots
  • 2 cloves garlic
  • 2 small green tomatoes
  • 1/2 teaspoon salt
  • 1/4 teaspoon powdered stock
  • 1 tablespoon lime juice

Preparation

  1. Clean and score the tilapia fish, then wash thoroughly, drain, sprinkle with lime juice, let it sit for 15 minutes, then rinse again with water, and drain.

  2. Mix the flour, salt, and ground pepper, stir well, and coat the fish evenly in the flour mixture.

  3. Fry the coated fish in hot oil until cooked and golden brown, then remove and drain.

  4. Boil the chilies, shallots, garlic, and green tomatoes in boiling water briefly, then remove and drain.

  5. Coarsely grind the boiled ingredients, add lime juice, salt, and powdered stock, then drizzle with about 4 tablespoons of hot oil from frying the fish, and mix well.

  6. Place the fried fish on a serving plate, pour the green sambal over it, and serve with warm rice.
