Homemade Gluten-Free Twix Bars

Ingredients

  • 3/4 cup all-purpose flour (gluten-free, e.g., Bob's Red Mill)
  • 1 cup almond flour
  • 1/2 teaspoon baking powder
  • 1/2 cup coconut sugar
  • 2 tablespoons milk
  • 1/2 teaspoon vanilla extract
  • 1 egg
  • Caramel for topping (amount as desired)
  • Chocolate for topping (amount as desired)

Preparation

  1. Preheat oven to 350F and line an 8x8 pan with parchment paper.

  2. In a mixing bowl, whisk together the milk, vanilla extract, and egg, then stir in the remaining ingredients. The dough may look dry at first, but keep stirring and use your hands to form a ball.

  3. Press the cookie dough into the 8x8 pan and bake for 15 minutes.

  4. Let it cool for a few minutes, then add the caramel layer using as much as desired, and freeze for at least 5 minutes.

  5. Remove from the freezer, top with melted chocolate, and freeze for 20 minutes. Then cut into bars and enjoy.
