Baked Eggs on Cheese Toast
Ingredients
- 1 packet of thick toast bread slices
- 1/4 cup cottage cheese
- 1/4 cup shredded cheddar cheese
- 1/4 cup shredded mozzarella cheese
- 6-8 large eggs
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2-3 tablespoons sliced black olives
Preparation
Position the rack in the middle of the oven and preheat the oven to 180°C.
Get a shallow-rimmed baking sheet, place half of the toast slices on the kitchen counter, use a round cookie cutter to cut a circle in the center of each toast slice, and do not discard the cut-out pieces but place them in the baking sheet to toast with the stuffed bread.
Using a wide metal knife, spread cottage cheese on the remaining toast slices and place the cut-out circle back onto the cheese-spread slice.
Sprinkle a little cheddar and mozzarella cheese in the center of each bread slice.
Place the toast slices in the baking sheet.
Crack an egg into the center of each toast slice, season with salt and pepper, add sliced black olives on top of the eggs, sprinkle a little more cheddar or mozzarella cheese, and drizzle with olive oil around the edges of the bread to crisp up during baking.
Place the baking sheet in the oven for 10 to 15 minutes until the eggs are well-cooked.
Serve the eggs on toast immediately with pickles and vegetables.
