Fried Potato and Egg Patties

Ingredients

  • 4 medium potatoes
  • 4 large eggs
  • 2 green onions, chopped
  • 2 tablespoons flour
  • 3 teaspoons salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon ground coriander

For frying

  • corn oil

Preparation

  1. Peel the potatoes and grate them using a coarse vegetable grater.

  2. Place the grated potatoes on a kitchen towel, wrap it up, and squeeze out all the liquid. Then transfer to a deep bowl.

  3. Add the eggs, chopped green onions, flour, salt, pepper, and coriander. Mix well to combine.

  4. Heat a flat skillet with a little corn oil. Take some of the mixture, shape it into patties with your hands, and fry until golden brown on both sides. Serve.
