Fried Potato and Egg Patties
Ingredients
- 4 medium potatoes
- 4 large eggs
- 2 green onions, chopped
- 2 tablespoons flour
- 3 teaspoons salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon ground coriander
For frying
- corn oil
Preparation
Peel the potatoes and grate them using a coarse vegetable grater.
Place the grated potatoes on a kitchen towel, wrap it up, and squeeze out all the liquid. Then transfer to a deep bowl.
Add the eggs, chopped green onions, flour, salt, pepper, and coriander. Mix well to combine.
Heat a flat skillet with a little corn oil. Take some of the mixture, shape it into patties with your hands, and fry until golden brown on both sides. Serve.
