Crispy Potato Triangles
Ingredients
- 2 large potatoes
- 1 tablespoon grated onion
- 2 large eggs
- 2 tablespoons flour
- 1/2 teaspoon salt
- 1/4 teaspoon cumin
- 1/4 teaspoon red pepper powder
- 1/2 cup corn oil
Preparation
Attach the blade with large holes to the food processor bowl. Grate the potatoes. Place the potatoes in a cloth bag and press hard to remove liquids.
In a deep bowl, place the potatoes, onion, eggs, flour, salt, cumin, and pepper. Using a wide plastic spoon, mix the ingredients together to combine.
In a wide skillet, add the oil and heat over medium heat.
Pour the potato mixture into the skillet in a disk shape. Cook until the bottom is golden brown. Flip the disk using a wide metal spoon and cook until the other side is golden brown and potatoes are fully cooked.
Serve the potato triangles hot with grilled steak or fish.
