Zucchini and Broccoli Fritters

Ingredients

  • 2 large zucchini
  • 1 cup chopped broccoli
  • 1 clove minced garlic
  • 2 medium green onions, finely chopped with leaves
  • 2 large eggs
  • 3 tablespoons flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 pinch black pepper
  • 1 tablespoon finely grated Romano or Parmesan cheese

For frying

  • corn oil

Preparation

  1. Wash the zucchini, dry it, do not peel it, and grate it using a vegetable grater.

  2. Place the grated zucchini in a strainer and set aside for half an hour to drain the liquid, then squeeze it between your hands until completely dry.

  3. Place the zucchini in a deep bowl, add the broccoli, garlic, and onion, mix until combined, then add the eggs, flour, baking powder, salt, black pepper, and cheese. Stir with a wooden spoon until well mixed. You should get a somewhat soft mixture.

  4. For frying, bring a wide skillet and put a little oil to lightly cover the bottom. Heat the oil well.

  5. Using a large spoon, take a portion of the mixture and place it in the skillet to form a 3-inch patty, wait until the bottom is golden, then flip to the other side, wait until the patties are well browned and golden. Transfer to absorbent paper and continue frying the rest, adding oil as needed.

  6. Place the patties on a plate and serve warm with a variety of pickles.
