Fluffy Apple Cupcake
Ingredients
- 2 large eggs
- 2/3 cup sugar (150 grams)
- 1/4 teaspoon vanilla
- 1/2 cup vegetable oil (100 grams)
- 2 cups chopped apples (250 grams)
- 1 tablespoon rosewater (10 grams)
- 1 and 1/2 cups flour (225 grams)
- 1 tablespoon baking powder (8 grams)
- 1 heaping teaspoon cinnamon (3 grams)
Preparation
Mix the chopped apples, half the sugar from the recipe, and 1 tablespoon rosewater together and set aside for about one to two hours until the sugar dissolves and the apples soften.
Beat the room-temperature eggs, the remaining sugar, and vanilla with a mixer until fluffy and creamy.
Add the vegetable oil and mix just until combined.
Sift half of the flour, baking powder, and cinnamon mixture and stir a little.
Add half of the apples along with their liquid.
Finally, add the remaining dry ingredients and apples and mix with a spatula until smooth.
Pour the batter into molds using a piping bag, filling them about 2/3 full.
Bake in a preheated oven at 175 degrees for about 20 to 30 minutes.
After cooling, decorate and serve.
Notes
The batter will be slightly thick.
The cupcakes taste better when fully cooled.
