Zucchini Oats with Banana and Almond Milk
Ingredients
- 1/3 medium zucchini
- 1/3 cup quick oats
- 1 tbsp ground flax seed
- 1/2 tsp cinnamon
- 1 banana
- 1 cup unsweetened almond milk
- Pinch of salt
Preparation
Finely grate the zucchini.
Slice the banana.
Add all ingredients to a saucepan and bring to a simmer while stirring continuously.
Allow to cook and thicken for about 3 minutes.
Serve as desired, with fruit, peanut butter, or seeds if preferred.
