Zucchini Oats with Banana and Almond Milk

Ingredients

  • 1/3 medium zucchini
  • 1/3 cup quick oats
  • 1 tbsp ground flax seed
  • 1/2 tsp cinnamon
  • 1 banana
  • 1 cup unsweetened almond milk
  • Pinch of salt

Preparation

  1. Finely grate the zucchini.

  2. Slice the banana.

  3. Add all ingredients to a saucepan and bring to a simmer while stirring continuously.

  4. Allow to cook and thicken for about 3 minutes.

  5. Serve as desired, with fruit, peanut butter, or seeds if preferred.
