Oatmeal and Chia Pudding Breakfast Bowl

Ingredients

  • 1/2 cup old fashioned oats
  • 1/2 cup almond milk
  • 1/3 cup egg whites
  • 1 teaspoon vanilla
  • 1/2 teaspoon cinnamon
  • 1/4 cup chia seeds
  • 1 teaspoon beet root powder
  • 1 tablespoon maple syrup
  • peanut butter
  • bee pollen
  • chia seeds
  • frozen blueberries

Preparation

  1. Mix chia seeds, almond milk, beet root powder, and maple syrup in a container and refrigerate overnight to make chia pudding

  2. Combine oats, almond milk, egg whites, vanilla, and cinnamon in a pot and cook on the stove until thickened, stirring occasionally

  3. Assemble the bowl by adding the cooked oatmeal, prepared chia pudding, peanut butter, bee pollen, additional chia seeds, and frozen blueberries in a serving bowl
