Vegan Veggie Sandwich with Basil Pesto

Ingredients

  • prepared basil pesto
  • avocado
  • leafy greens
  • tomato slices
  • sourdough bread
  • melty shredded vegan cheese

For basil pesto

  • 3 cups basil
  • juice of one lemon
  • 1/4 cup olive oil
  • 1/3 cup pine nuts (or cashews in a pinch)
  • 2 garlic cloves
  • himalayan sea salt, to taste

Preparation

  1. Spread basil pesto on slices of sourdough bread

  2. Add avocado, leafy greens, and tomato slices

  3. Top with melty shredded vegan cheese and assemble the sandwich

Basil pesto making

  1. Add all ingredients except olive oil to a food processor

  2. Pulse until evenly chopped

  3. Slowly add olive oil through the top of the processor and pulse until combined
