Vegan Veggie Sandwich with Basil Pesto

Ingredients

  • 3 cups basil
  • juice of one lemon
  • 1/4 cup olive oil
  • 1/3 cup pine nuts or cashews
  • 2 garlic cloves
  • himalayan sea salt to taste
  • avocado
  • leafy greens
  • tomato slices
  • sourdough bread
  • melty shredded vegan cheese

Preparation

  1. Add all ingredients except olive oil to a food processor

  2. Pulse until evenly chopped

  3. Slowly add olive oil through the top of the processor and pulse until combined

  4. Spread the basil pesto on sourdough bread

  5. Add avocado, leafy greens, tomato slices, and shredded vegan cheese

  6. Assemble the sandwich and serve
