Vegan Veggie Sandwich with Pesto

Ingredients

Basil pesto

  • 3 cups basil
  • juice of one lemon
  • 1/4 cup olive oil
  • 1/3 cup pine nuts (or cashews in a pinch)
  • 2 garlic cloves
  • himalayan sea salt, to taste

Sandwich components

  • Basil pesto
  • avocado
  • leafy greens
  • tomato slices
  • sourdough bread
  • melty shredded vegan cheese

Preparation

Pesto

  1. Add all ingredients except olive oil to a food processor

  2. Pulse until evenly chopped

  3. Slowly add olive oil through the top of the processor and pulse until combined

Sandwich assembly

  1. Spread basil pesto on slices of sourdough bread

  2. Layer avocado, leafy greens, tomato slices, and melty shredded vegan cheese on top

  3. Assemble the sandwich and serve
