Egg Mayo and Cheese Sandwich

Ingredients

  • 2 thick slices of soft white bread
  • 3 eggs (boiled for 8 minutes)
  • Lighter than light mayonnaise
  • Sea salt
  • Cracked black pepper
  • Extra mature cheddar cheese

Preparation

  1. Boil the eggs for 8 minutes until hard-boiled.

  2. Cool the eggs, peel them, and mash with mayonnaise, sea salt, and cracked black pepper to make the egg mayo mixture.

  3. Spread the egg mayo mixture onto one slice of bread.

  4. Add slices of extra mature cheddar cheese on top.

  5. Cover with the second slice of bread to form the sandwich and serve immediately.
