Fried Fish with Dabu-Dabu Sauce

Ingredients

Fish marinade

  • 2 finger-lengths turmeric
  • 2 cloves garlic
  • 2 teaspoons salt
  • Seasoning to taste

Dabu-dabu sauce

  • 2 handfuls red bird's eye chilies
  • 1/2 onion
  • 3 shallots
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • Seasoning to taste
  • Oil from frying fish

Preparation

Fish

  1. Grind all the fish marinade ingredients

  2. Add water as needed and marinate the fish for at least 30 minutes

  3. Fry with plenty of oil until dry

  4. Set aside

Sauce

  1. Pour the oil from frying the fish into a pan

  2. Heat the oil, then add shallots and onion and stir-fry until soft

  3. Add chilies, sugar, salt, and seasoning, then taste test

  4. Pour the sauce over the fried fish

  5. Serve immediately
