Simple Brazilian Corn Cake

Ingredients

  • 1 can green corn, drained
  • 1/2 cup milk
  • 3/4 cup oil
  • 3 eggs
  • 1 1/2 cups sugar
  • 2 cups all-purpose flour
  • 1/2 cup cornstarch
  • 1 tablespoon baking powder

Topping

  • Sugar, for sprinkling
  • Ground cinnamon, for sprinkling

Preparation

  1. Blend the milk, oil, corn, sugar, and eggs in a blender until smooth

  2. Sift the flour and cornstarch into a bowl

  3. Pour the blended mixture into the bowl and mix until well combined

  4. Pour the batter into a greased and floured 20cm tube pan

  5. Bake in a preheated oven at 180Β°C for about 40 minutes

  6. Let the cake cool in the pan for 10 minutes, then unmold and let cool completely

  7. Sprinkle with sugar and ground cinnamon
