Simple Gluten-Free Shortbread Fingers
Ingredients
- 170g (1.5 cups or 6 oz) gluten free plain or all purpose flour
- 120g (1/2 cup or 4 oz) margarine
- 60g (1/4 cup or 2 oz) sugar, plus extra for dusting
Preparation
Mix everything in a bowl until it resembles breadcrumbs, then use your hands to form a dough ball.
Line a baking tray with parchment and put the dough onto it, flattening it down with your hands or a rolling pin.
Use hands to form it into a rectangular shape about 1 cm thick, score into 8 fingers, pierce each finger 3 times with a fork, and sprinkle over extra sugar.
Put the tray into the fridge for 30 minutes.
Pre-heat the oven to 200 fan/425 Fahrenheit/gas mark 7.
Remove the tray from the fridge and bake for 20 minutes until slightly golden, checking after 15 minutes to avoid browning.
Leave to cool, sprinkle over more sugar, and pull the slices apart.
