Return of the Breakfast Bowl
Ingredients
- 1 egg
- ghee
- red pepper flakes
- 1/2 sweet potato
- tomatoes
- feta cheese
- Brussels sprouts
- avocado oil
- squash
- fruit
Preparation
Prep sweet potato and veggies beforehand for easier preparation.
Bake sweet potato at 400F for 45 minutes, then turn off oven and leave in for another 45 minutes.
Bake Brussels sprouts at 400F for about 40 minutes with a little avocado oil.
In a cast iron skillet, cook the egg and tomatoes together in ghee, adding red pepper flakes and feta cheese.
Add leftover squash and fruit to assemble the breakfast bowl.
