Vanilla Cauliflower Oat Breakfast

Ingredients

  • 1/2 cup gluten-free oats (soaked)
  • 1/2 cup frozen cauliflower rice
  • Splash of cashew milk
  • Large squirt of vanilla syrup

Toppings

  • frozen blueberries
  • sautéed cinnamon apple
  • smooth nut butter

Preparation

  1. Soak the gluten-free oats for at least 30 minutes or overnight to soften.

  2. Sauté the cinnamon apple in a pan until tender and fragrant.

  3. In a bowl, combine the soaked oats, frozen cauliflower rice, cashew milk, and vanilla syrup; mix well and heat if desired to achieve thickness.

  4. Top the mixture with frozen blueberries and smooth nut butter.

  5. Serve immediately with a fork for easy eating.
