Banana Granola with Oats and Nuts

Ingredients

  • 2 ripe bananas
  • 1/4 cup neutral oil (such as sunflower or avocado)
  • 1 teaspoon vanilla extract
  • 3 cups old-fashioned rolled oats
  • 1/2 cup unsalted nuts (such as pecans, almonds, walnuts, or pistachios)
  • 1 teaspoon cinnamon

Optional spices

  • Cardamom, to taste
  • Ground ginger, to taste
  • Ground cloves, to taste
  • Allspice, to taste

Preparation

  1. In a bowl, mash the bananas. Add the oil and vanilla extract, and mix together.

  2. Stir in the oatmeal, nuts, and spices until all ingredients are evenly mixed.

  3. Spread the mixture evenly on a baking tray lined with baking paper.

  4. Bake the granola in a preheated oven at 325°F for 25 minutes, or in an air fryer at 325°F for 15 minutes, until golden brown. Stir halfway through the baking time.

  5. Allow the granola to cool completely before storing it in an airtight container.
