Creamy Coconut and Cardamom Steel Cut Oats

Ingredients

  • 1 cup steel cut oats
  • 2 tbsp ground flaxseed
  • 1 tsp cinnamon
  • 1/4 tsp ground cardamom
  • 2 tbsp unsweetened coconut flakes
  • 1 tbsp maple syrup or 1-2 medjool dates
  • 1/4 tsp salt
  • 3 cups almond coconut milk
  • 1 banana

Preparation

  1. Add all ingredients to the Instant Pot

  2. Close the lid and seal the pressure cooker

  3. Set to manual pressure for 2 minutes

  4. Allow pressure to release naturally

  5. Open the pressure cooker and stir well to combine

Stovetop method

  1. Add all ingredients to a saucepan and bring to a low simmer

  2. Cover and cook for 25-30 minutes, stirring occasionally to prevent sticking
