Baked Banana Oats

Ingredients

  • 1/2 cup rolled oats (gluten free)
  • 1 tbsp flaxseed
  • 1 tbsp almond flour
  • 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • pinch of salt
  • 1/2 tsp cinnamon
  • pinch of nutmeg
  • 1/4 tsp ginger powder
  • 1 mashed banana
  • 1/3 cup almond milk ?

Preparation

  1. Preheat oven to 400F

  2. Combine all dry ingredients in a bowl and stir to fully combine

  3. Add in banana and milk and stir together

  4. Place mixture in a small ramekin (mini-cake pan works too) and place in oven for 20 minutes

  5. Remove from oven and allow to cool for a about 10 minutes before serving

  6. Top with fruit as desired

  7. If you want to know how I made the cooked blueberries

  8. I took 1/3 cup of fresh blueberries and cooked them in a sauce pan with 1 tbsp of water

  9. I lightly mashed them with a spatula as they cooked for about 2-3 minutes

  10. Once done I added 1 tsp of chia seeds to help thicken it up

  11. You can add sweetener if you’d like, but I thought the blueberries I got were pretty sweet on their own so totally up to you
