Baked Banana Oats
Ingredients
- 1/2 cup rolled oats (gluten free)
- 1 tbsp flaxseed
- 1 tbsp almond flour
- 1/2 tsp baking powder
- 1/4 tsp baking soda
- pinch of salt
- 1/2 tsp cinnamon
- pinch of nutmeg
- 1/4 tsp ginger powder
- 1 mashed banana
- 1/3 cup almond milk ?
Preparation
Preheat oven to 400F
Combine all dry ingredients in a bowl and stir to fully combine
Add in banana and milk and stir together
Place mixture in a small ramekin (mini-cake pan works too) and place in oven for 20 minutes
Remove from oven and allow to cool for a about 10 minutes before serving
Top with fruit as desired
If you want to know how I made the cooked blueberries
I took 1/3 cup of fresh blueberries and cooked them in a sauce pan with 1 tbsp of water
I lightly mashed them with a spatula as they cooked for about 2-3 minutes
Once done I added 1 tsp of chia seeds to help thicken it up
You can add sweetener if you’d like, but I thought the blueberries I got were pretty sweet on their own so totally up to you
