Banana and Custard Baked Oats
Ingredients
- 1 small over ripe banana, mashed
- 40g oats (gluten free oats if coeliac)
- 125g / 1 small pot of low fat vanilla yoghurt or custard
- 1 egg white (or egg replacer/chia/flax egg if vegan)
- 1 tsp ground cinnamon
- 1 tsp baking powder
- 1 tbsp lemon juice
Preparation
Mash the banana.
Add a whisked egg white or vegan egg.
Add all of the other ingredients, leaving half of the yoghurt or custard for serving later, and mix until smooth.
Line a small oven-proof dish with greaseproof paper, pour the mixture in, and bake for 30 minutes at 180 degrees Celsius, 350 degrees Fahrenheit, or gas mark 4.
Top with the remaining vanilla yoghurt or custard.
