Persian Green Plum Marinade
Ingredients
- Green plums
- Salt
- Mint
- Sour orange juice
Optional additions
- Pennyroyal
- Sugar
Preparation
Wash the green plums.
Place them in a deep wooden container or a thick plastic bag and pound them.
Gently crush the green plums using a mortar handle or similar tool.
Add salt and mint.
Add a little sour orange juice.
Optionally, add a bit of pennyroyal.
Let it sit for about 15 minutes to allow the flavors to infuse.
The dish is now ready to serve.
Tips
For a sweet-sour version, mix a little sugar with the salt before adding it to the plums.
Some variations use a herb called dalal, but it can be omitted if unavailable.
