Healthy Single-Serve Millionaire's Shortbread
Ingredients
- 50g (1/2 cup) oats (gf if required)
- 1 tbsp (15g) margarine (dairy-free)
- 1 tbsp powdered sweetener, maple syrup or sugar
- 5 dates and 2 tbsp water
- 5 chunks dark chocolate
- Sprinkle of salt (optional)
Preparation
Blitz the oats in a blender to a flour consistency.
Put the oats, margarine and sweetener in a bowl, mix with a spoon until it clumps together, then use your hands to create a dough ball.
Put it on a plate and flatten it out a bit. Leave to chill in the fridge.
Meanwhile, blitz the dates and water in a blender to a thick paste.
Spoon it onto the oat base then put it back in the fridge.
Put the chocolate chunks into a mug and melt in the microwave for one minute or in a saucepan on the hob.
Once melted, spread a layer on top of the date caramel, sprinkle with salt, and leave in the fridge for an hour or so until firm. To make it look neat, use a sharp knife to cut it into a square.
