Brazilian Grated Cassava Cake
Ingredients
- 500 g grated cassava (raw)
- 1 1/2 cups sugar (270g)
- 2 tablespoons butter (40g)
- 2 eggs
- 200 mL coconut milk
Preparation
In a large bowl, combine sugar, eggs, and butter
Mix well until the sugar dissolves and add the coconut milk
Add the grated cassava and mix until well combined
Pour into a buttered pan
Bake in a preheated oven at 180Β°C for about 50 minutes
Let cool, unmold, and serve
Tips
The batter will be a bit runny because it doesn't contain wheat flour
