Malaysian Pandan Layered Pudding

Ingredients

Bottom layer (green)

  • 1 cup rice flour
  • 1/2 cup sugar or to taste
  • 1 cup pandan juice
  • 5 cups water
  • A little green food coloring

Top layer (white)

  • 1 cup rice flour
  • 1 box coconut milk (200ml)
  • 6 cups water
  • Salt

Preparation

Bottom layer

  1. Mix all ingredients in a container and stir to avoid lumps

  2. Cook on stove until thick and bubbly, stirring continuously

  3. Pour the mixture little by little into a mold

Top layer

  1. Mix all ingredients and stir to avoid lumps

  2. Cook until bubbly

  3. Remove from heat and pour over the green layer

  4. Let it cool and set
