Malaysian Pandan Layered Pudding
Ingredients
Bottom layer (green)
- 1 cup rice flour
- 1/2 cup sugar or to taste
- 1 cup pandan juice
- 5 cups water
- A little green food coloring
Top layer (white)
- 1 cup rice flour
- 1 box coconut milk (200ml)
- 6 cups water
- Salt
Preparation
Bottom layer
Mix all ingredients in a container and stir to avoid lumps
Cook on stove until thick and bubbly, stirring continuously
Pour the mixture little by little into a mold
Top layer
Mix all ingredients and stir to avoid lumps
Cook until bubbly
Remove from heat and pour over the green layer
Let it cool and set
