Hearty Pumpkin Oats with Spices and Fruits

Ingredients

  • 1/2 cup instant oats
  • 1 tsp chia seeds
  • 2 dates
  • 2 tbsp canned pumpkin purée
  • Pinch cinnamon
  • Pinch ginger
  • Pinch nutmeg
  • 1 tsp maple syrup
  • 3/4 cup hot water

Toppings

  • Ripple Foods non-dairy yogurt
  • persimmon
  • blueberries
  • nibs
  • pepitas
  • hemp hearts

Preparation

  1. Cut the dates into small pieces.

  2. Combine all dry ingredients in a bowl.

  3. Add maple syrup, pumpkin purée, and hot water.

  4. Stir together until well combined and allow to sit and thicken for 1-2 minutes.

  5. Adjust thickness by adding more hot water if needed.

  6. Top the bowl with non-dairy yogurt, persimmon, blueberries, nibs, pepitas, and hemp hearts.
