Hearty Pumpkin Oats with Spices and Fruits
Ingredients
- 1/2 cup instant oats
- 1 tsp chia seeds
- 2 dates
- 2 tbsp canned pumpkin purée
- Pinch cinnamon
- Pinch ginger
- Pinch nutmeg
- 1 tsp maple syrup
- 3/4 cup hot water
Toppings
- Ripple Foods non-dairy yogurt
- persimmon
- blueberries
- nibs
- pepitas
- hemp hearts
Preparation
Cut the dates into small pieces.
Combine all dry ingredients in a bowl.
Add maple syrup, pumpkin purée, and hot water.
Stir together until well combined and allow to sit and thicken for 1-2 minutes.
Adjust thickness by adding more hot water if needed.
Top the bowl with non-dairy yogurt, persimmon, blueberries, nibs, pepitas, and hemp hearts.
