Savoury Chutney French Toast

Ingredients

  • 4 slices brioche or other high-quality bread, ideally 2–3 days old
  • 2 eggs
  • 1/4 cup whole milk
  • 1 small onion, finely chopped
  • 1 small green chili, finely diced (adjust to taste)
  • A handful of fresh coriander leaves, chopped
  • 1/2 tsp Shan Karara Zeera powder
  • 1/2 tsp Shan Coriander powder
  • 1/4 tsp Shan salt (or to taste)
  • Shan Black Pepper, to taste
  • Shan Green Chutney
  • Neutral oil or ghee, for frying

Optional

  • 2 additional eggs, for frying and serving

Preparation

  1. Finely chop the onion, green chili, and coriander leaves, then whisk together the eggs and milk in a wide, shallow bowl until fully combined and stir in the chopped vegetables, seasoning with Shan zeera powder, coriander powder, salt, and black pepper to taste.

  2. Lightly spread Shan Green Chutney on one side of each bread slice, dip each slice into the egg mixture chutney-side up, and let it soak for a few seconds to absorb flavors without oversaturating, especially if the bread is soft.

  3. Heat a little oil or ghee in a griddle or nonstick pan over medium heat, place the soaked slices on the pan chutney side up, and cook for 2–3 minutes per side, pressing gently with a spatula until golden brown and cooked through.

  4. For a heartier version, top each slice with a freshly fried egg before serving, and serve hot with extra chutney or a spoonful of yogurt on the side.
