Simple Grated Cassava Cake
Ingredients
- 500 g grated raw cassava
- 1.5 cups sugar (270g)
- 2 tablespoons butter (40g)
- 2 eggs
- 200 mL coconut milk
Preparation
In a large bowl, combine sugar, eggs, and butter. Mix well until sugar dissolves, then add coconut milk.
Add the grated cassava and mix until well homogeneous.
Pour the mixture into a buttered pan.
Bake in a preheated oven at 180°C for about 50 minutes.
Let it cool, unmold, and serve.
Notes
The batter is a bit soft because it does not contain wheat flour.
