Usa Style Indonesian Fried Rice
Ingredients
- 2 pots cooked rice
- Chicken, beef, shrimp, or squid (optional)
- 4 cloves chopped garlic
- 1 chopped shallot
- 3 tablespoons ground chili (add more for spiciness)
- 1 tablespoon oyster sauce
- 1 tablespoon chili sauce
- 1 chicken stock cube
- Carrots, long beans, or mixed vegetables
- Salt and seasoning to taste
Red cooked meat components
- 500 grams beef
- 3 cloves crushed garlic
- 1 onion coarsely sliced
- 1 thin slice ginger
- 2 tablespoons ground chili
- 3 tablespoons chili sauce
- 2 tablespoons tomato sauce
- 1 tablespoon oyster sauce
- 1 teaspoon fish sauce
- 2 kaffir lime leaves
- 4-5 crushed bird's eye chilies
- 1 teaspoon cornstarch mixed with beef broth water
- Salt and sugar to taste
- Broccoli, carrots, long beans
- Small amount red food coloring
Preparation
Cook the rice as usual and set aside.
Heat oil in a wok or large pan over medium heat.
Add chopped garlic and shallot, fry until fragrant.
Add protein such as chicken, beef, shrimp, or squid and cook until done.
Add vegetables and stir-fry until slightly softened.
Mix in the cooked rice, ground chili, oyster sauce, chili sauce, and chicken stock cube.
Season with salt and other seasonings to taste, and heat through.
Meat
Boil beef with a small amount of red food coloring until tender, then drain and reserve some broth.
Heat oil in a pan and fry crushed garlic, sliced onion, ginger, and crushed bird's eye chilies until fragrant.
Add ground chili, chili sauce, tomato sauce, oyster sauce, fish sauce, and kaffir lime leaves.
Stir in the boiled beef and coat with the sauce.
Thicken the mixture with a cornstarch slurry made from reserved beef broth.
Add vegetables and cook until tender.
Season with salt and sugar to taste.
