Chia Seed Pudding with Blueberry Milk

Ingredients

  • 1/4 cup frozen blueberries
  • 1 cup almond milk
  • pinch of cinnamon
  • 3 tsp maple syrup
  • 1/3 cup chia seeds
  • Additional toppings, as desired

Preparation

  1. Add first 4 ingredients to a blender, combine until smooth

  2. Transfer the “blueberry milk” to a sealable jar and add chia seeds. Mix well and let it sit for 5 min

  3. After 5 min, mix pudding one more time (to ensure no clumps on bottom), cover and refrigerate for min 5 hours, preferably overnight

  4. Add your toppings of choice and enjoy!
